Matthew Evans finished after 5 years on Eat out. His last review in The Sydney Morning Herald " Good Living" of December 13,2005 was on Pier Tasting Room in Rosebay.

Matthew wrote: "Air-dried Spanish tuna (mojama, like fish prosciutto) rocks"

Mojama de Atun or Dried Tuna Fillets is a delicacy  which was first made during the moors occupation in the south of Spain,  with a salted and midly-sweet flavour, the tuna is air-dried and has been named Spain's Coastal treasure. It is gaining international recognition in the restaurant and specialty food sectors around the world.

 

                                           

Mojama is 100% Natural, is a rich source of Omega-3, and is low in fat and carbs.

It's texture is similar to cured ham and is sure to appeal to ham and fish lovers alike.
