Black Garlic

BLACK GARLIC

 

Australian culinary scene this year's  ingredient: Black garlic. Black garlic is created by ageing raw garlic for a month in a fermenting cellar under high heat using a patented process. This process blackens the garlic and produces a chewy texture. It has a slightly sweet flavour, with hints of licorice, porcini mushroom and aged balsamic vinegar. Invented in South Korea just 5 years ago, black garlic is now used by top chefs world-wide. It can be found in today's best kitchens including El Bulli in Spain, Aldea and Le Bernardin in New York, Tru in Chicago.

This versatile ingredient can be used in many ways, enhancing any dish with its soft and chewy texture. Add to marinades, or slice thinly (as you would black truffles) over salads or seafood, or add to desserts to bring out the sweet flavour of the garlic. Delicious on bruschetta or roasted chicken, the potential is limited to one's imagination.

Store in a cool, dry place.

Come along for a fantastic late Sunday lunch and bring the kids along, we also have a great Playground right outside our door for hours of entertainment for your children, while you sit and sip on fine wine and feast on fine food.

We are cooking a huge Paella Gallart.

 

 

Moros & Olives Roasted Lamb (entre)

  • Manzanilla, Gordal and Black olives with Spicy lamb on a traditional Chick pea puree.

Pella Gallart (mains)

  • From the hills north of Barcelona, a farmhouse paella with calamari, Chicken, Chorizo, Jamon, sweet peas, Piquillo peppers, saffron and our secret stock.

Spain for a long time, was the major supplier of Saffron to the world. The fields of La Mancha are a prime location for cultivating this devine spice. Recently, the Spanish Saffron industry developed its finest quality Saffron ever!  We are proud to be importing this premium product.

It is a must see, For colour, flavour and volume there is nothing like it anywhere in the world. Our fantastic Turron is also available. This treat was invented in Barcelona and is a delicate blend of Almonds and Honey. Traditionally had around the festive season by families all over Spain. Though it can be eaten at anytime throught the year without regret!
